| Taken from a very old, Kenwood chefette book. I find it fail safe & easy, a good way to use over-ripe bananas.
5ozs self raising flour 1/4 tsp bicarbonate of soda 1 ripe banana 2ozs soft margarine 1 egg 40zs soft brown sugar 1/2 tsp vanilla 1/4 tsp salt
Place egg, banana, sugar, marg, vanilla, & salt in a liquidizer. Blend on speed 3 to a smooth consistency. OR fork-mash banana & sugar to a runny mix & beat the rest in to the smooth consistency. Sift flour & soda into a bowl & pour the mix in. combine thoroughly. Bake in 2, greased, floured, 6" tins at 375 F about 25 mins, till set & knife comes away clean, when poked in the middle. Turn out on wire tray. When cool, sandwich together with butter cream, using another ripe banana, mashed in more brown sugar, before beating in the butter.
This cake freezes well, so I usually double quantities, to make 2. Dusting icing sugar through a doyle, before serving, makes a quick, attractive finish. | |
